Fish & Marinade
Prepare marinade
In a small bowl whisk together 2 tablespoons olive oil, chipotle powder, smoked paprika, ground cumin, garlic powder, kosher salt, black pepper and 1 tablespoon lime juice until a paste forms.
Marinate fish
Pat the fish fillets dry with paper towels. Rub the spice marinade evenly over both sides of the fillets. Let sit 10–15 minutes at room temperature (or cover and refrigerate up to 30 minutes).
Chipotle Crema & Salsa
Make chipotle crema
In a small bowl combine 1/2 cup sour cream, 1/2 adobo chipotle pepper (minced) or 1/2 teaspoon chipotle powder if preferred, 1 tablespoon mayonnaise, 1 teaspoon lime juice and 1/4 teaspoon salt. Whisk until smooth. Taste and adjust heat or salt. Refrigerate until ready to assemble.
Prepare salsa
If using jarred salsa, transfer 1/2 cup to a small bowl and stir. If using fresh: combine diced tomatoes, finely diced red onion (2 tbsp), a pinch of salt and a squeeze of lime. Set aside.
Grill / Cook Fish
Cook fish
Place fillets on the hot pan and cook without moving 3–4 minutes until the underside is nicely seared and edges are opaque. Flip and cook another 2–4 minutes until fish flakes easily with a fork and reaches 145°F (63°C) or is opaque throughout. For a light blackened finish, press gently and let the spices char slightly without burning.
Rest and flake
Transfer cooked fish to a plate and let rest 2 minutes. Using a fork, flake the fish into bite‑sized pieces.
Tortillas & Assembly
Warm tortillas
Warm the 2 flour tortillas on the grill pan or in a dry skillet 20–30 seconds per side until pliable and lightly toasted. Keep warm wrapped in a clean towel.
Assemble tacos
Place each warmed tortilla on a plate. Divide the flaked fish evenly between the two tortillas. Top each with shredded cheese (about 1/2 cup total divided), diced tomatoes, optional shredded cabbage or lettuce, and chopped cilantro. Spoon 1–2 tablespoons salsa over the fish, then drizzle 1–2 tablespoons chipotle crema on each taco.
Finish and serve
Garnish with extra cilantro and serve with lime wedges for squeezing over the tacos. Serve immediately while warm.
