Prepare glass and muddle
Place the mint leaves and granulated sugar into a sturdy highball or Collins glass. Cut the lime in half. Squeeze the juice from half a lime (about 1/2 oz) into the glass, then drop two small lime wedges (or the squeezed half) into the glass for extra flavor. Using a muddler or the back of a spoon, gently press and twist the mint, sugar, and lime wedges together 6–8 times until the sugar begins to dissolve and the mint releases its aroma. Do not over-muddle — you want to bruise the mint lightly, not shred it.
Add rum and ice
Pour 2 oz Bacardi Limon over the muddled mixture. Fill the glass about three-quarters full with crushed ice (about 1 cup).
Top and stir
Pour approximately 3 oz chilled club soda over the ice to top off the drink. Using a bar spoon, gently stir the drink 6–8 times from bottom to top to integrate the rum, lime, sugar, and soda while lifting some mint leaves through the drink for aroma.
Garnish and serve
Add a fresh mint sprig and a lime wedge or wheel to the rim for garnish. Optionally smack the mint sprig between your palms first to release its oils before garnishing. Serve immediately with a straw.
