Prepare vegetables and bread

Wash and dry the mixed greens. Slice the tomato into about 3 even slices and thinly slice the red onion into rings. Slice the sandwich roll lengthwise, leaving a hinge if desired, or split completely. If you prefer warm bread, preheat oven to 350°F (175°C) and warm the split roll for 4–6 minutes.

Dressing

In a small bowl or jar combine extra-virgin olive oil (2 tbs) and red wine vinegar (1 tbs). Add Dijon mustard if using (1 tsp). Whisk or shake until emulsified. Stir in Italian seasoning (1 tsp), kosher salt (1 tsp), freshly ground black pepper (1 tsp), and crushed red pepper flakes (0.25 tsp) to taste. Taste and adjust seasoning — it should be bright and slightly sharp to cut the richness of the meats and cheese.

Assemble Sandwich

If using Dijon, lightly spread it on the bottom half of the roll. Layer the meats directly onto the roll in this order for even flavor distribution: provolone slices (3 slices) first (this helps create a barrier so the bread doesn't get soggy), then ham (4 oz), capicola (3 oz), and salami (3 oz).

Top the meats with the tomato slices (3 slices) and red onion rings (4 rings). Scatter the banana pepper slices (1 tbs) evenly over the tomato and onions.

Place the mixed greens (1 cup) on top of the peppers. Drizzle the prepared dressing evenly over the greens, tomatoes and onions (use all or most of the dressing depending on taste).

Close the sandwich and press gently to compact. If you prefer the cheese slightly melted, wrap the sandwich in foil and place in a preheated 350°F (175°C) oven for 5–7 minutes, or toast in a panini press until warmed through.

Slice the sandwich in half on a diagonal and serve immediately. Adjust additional salt, pepper, or red pepper flakes to taste at serving.
