Classic Hummus Recipe
With tomato, cucumbers, Greek olive and a side of pita and tzatziki sauce.

Method
Hummus
Prepare chickpeas
Drain canned chickpeas, reserving 2 tablespoons of the can liquid. For creamier hummus, optionally peel a few chickpeas by pinching skins off. Place chickpeas in a food processor.
Blend base
Add tahini, lemon juice, garlic cloves, ground cumin, and 1 teaspoon salt to the food processor with the chickpeas. Process until coarsely combined, about 30 seconds.
Emulsify and adjust
With the processor running, slowly drizzle in 2 tablespoons olive oil. Continue processing while adding the reserved chickpea liquid (or water) 1 tablespoon at a time until the hummus reaches a smooth, spreadable consistency (about 45–90 seconds). Scrape down the sides as needed.
Final seasoning
Taste and adjust seasoning with additional salt, lemon juice, or cumin if desired. Transfer hummus to a shallow serving bowl and use the back of a spoon to create a swirl for garnishing. Drizzle 1 tablespoon extra-virgin olive oil over the top and sprinkle 1/2 teaspoon paprika.

Dice the tomato and cucumber into small, consistent pieces (about 1/4-inch). Pit and halve the olives if not already pitted. Combine diced tomato, cucumber, olives, chopped parsley, lemon zest, 1/4 teaspoon salt and 1/8 teaspoon black pepper in a small bowl. Toss gently to combine. Taste and adjust seasoning. Refrigerate briefly if making ahead.
Tzatziki (side)
Grate the cucumber and place in a clean kitchen towel or paper towel. Squeeze firmly to remove as much moisture as possible until you have roughly 1/4 cup packed grated cucumber.
In a small bowl, combine the Greek yogurt, grated cucumber, chopped dill, minced garlic, 1 teaspoon lemon juice, 1 teaspoon olive oil, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir until smooth and chill for at least 10 minutes to let flavors meld.
Sides
Preheat a skillet over medium heat. Brush pita rounds lightly with 1 tablespoon olive oil on both sides. Warm each pita in the skillet 1–2 minutes per side until pliable and slightly charred in spots. Keep warm wrapped in a clean towel.
