    Prepare chickpeas

    If using canned chickpeas, drain and rinse them well under cold water. If you prefer a silkier texture, remove a few skins by gently rubbing the chickpeas between your fingers, then discard the loosened skins.

    Cook briefly (optional)

    For a warmer, softer spread, place the rinsed chickpeas in a small saucepan with 1/4 cup of water, bring to a gentle simmer for 5 minutes, then drain. Skip this step if you want a fresher cold preparation.

    Blend

    In a food processor or high-speed blender, combine the chickpeas, 3 tablespoons extra virgin olive oil, lemon juice, the garlic clove, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Add 1/2 to 1 cup reserved canning liquid or plain water: start with 1/2 cup and add more while blending to reach the desired consistency. Process until mostly smooth, stopping to scrape down the bowl as needed. Blend 1–2 minutes for a slightly textured spread or 3–4 minutes for a silkier purée.

    Adjust seasoning & texture

    Taste and adjust salt, pepper, and lemon. If too thick, add up to the remaining reserved water in tablespoon increments until the texture is creamy but not soupy. If you want it richer, blend in an additional 1/2 tablespoon olive oil.

Finishing & garnish

    Plate

    Spoon the chickpea purée onto a serving plate or shallow bowl and use the back of the spoon to create a shallow well in the center.

    Add Parmigiano

    Sprinkle the 1/2 cup finely grated Parmigiano-Reggiano evenly over the top of the purée, letting some fall into the well and some stay on the surface for texture.

    Finish with oil & garnish

    Drizzle 1 tablespoon extra virgin olive oil over the top, especially into the central well. Scatter the chopped parsley and, if using, the 1/4 teaspoon crushed red pepper flakes for a touch of color and heat.

    Serve

    Serve immediately with crusty bread, grilled vegetables, or as part of an antipasto board. Leftovers can be refrigerated in an airtight container for up to 3 days; bring to room temperature before serving and stir in a little extra olive oil if it has thickened.
