Preparation of Peach Puree

Prepare the Peaches

Wash the peaches thoroughly under cool running water. Cut them in half, remove the pit, and chop them into smaller pieces.

Make the Puree

In a blender, combine the chopped peaches, sugar, and lemon juice. Blend on high speed until smooth and creamy. If the mixture is too thick, you can add a tablespoon of water to help blend it better.

Strain the Puree (Optional)

If you prefer a smoother puree, you can strain the mixture through a fine mesh sieve to remove any pulp. Use a spatula to press the puree through the sieve.

Mixing the Bellini

Combine Ingredients

In a large glass or champagne flute, pour about 2-3 tablespoons of the peach puree.

Add the Prosecco

Slowly pour the Prosecco into the glass over the peach puree. Be careful to pour gently to prevent excessive fizzing.

Mix and Serve

Gently stir the mixture with a bar spoon or a straw to combine. Serve immediately and enjoy your Classic Bellini chilled.
