In a large pot, heat 5 liters of water to 160°F (70°C). Add the pale malt and caramel malt, stir well, and maintain the temperature for 60 minutes.

Mashing

After mashing, bring the mixture to a boil. Add the Cascade hops and boil for 60 minutes. Then add the Amarillo hops in the last 15 minutes of boiling.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort to a fermentation vessel and add the yeast. Seal with an airlock and let it ferment for 7-10 days at a consistent temperature.

Fermentation

After fermentation, add the pineapple juice and sugar. Allow the mixture to sit for an additional 3-5 days.

Flavoring

Once fermentation is complete, bottle the beer using sanitized bottles and caps. Let it carbonate for about 2 weeks.
