In a large pot, heat 5 liters of water to around 70°C (158°F). Add the pale malt, roasted barley, and crystal malt. Stir well and let it steep for 60 minutes.

Prepare the Mash

After mashing, drain the liquid (wort) into another pot. Rinse the grains with additional hot water to collect more wort.

Sparge the Grains

Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. 15 minutes before the end of the boil, add the flavor hops and optional coffee and dried fruit.

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Allow to ferment for about 1-2 weeks at room temperature.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles and allow to carbonate for another 1-2 weeks.
