In a large brew kettle, heat 10 liters of water to 165°F (74°C). Add the crushed pale and crystal malts to the kettle. Maintain the temperature at 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water (around 170°F / 77°C) until you collect about 6.5 liters of wort.

Sparging

Bring the wort to a boil. Once boiling, add the Citra hop pellets and boil for 60 minutes. In the last 15 minutes, add the Simcoe hop pellets.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Ferment at room temperature for 1 to 2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the bottling bucket. Transfer the beer into bottles, cap them, and let them carbonate for an additional 1-2 weeks.
