In a large mash tun, combine the barley malt with hot water at around 65-70°C (149-158°F). Allow it to sit for about 60 minutes to convert the starches into fermentable sugars.

Mashing

After mashing, transfer the mixture to a lauter tun and separate the liquid wort from the grain. This process may take about 30 minutes.

Lautering

Bring the wort to a boil and add the hops. Boil for 60 minutes, adding more hops as desired for bitterness and flavor.

Boiling

After boiling, cool the wort quickly using a wort chiller to around 20°C (68°F).

Cooling

Transfer the cooled wort to a fermentation vessel and add the yeast. Seal the vessel and allow fermentation to take place for about 7-10 days at around 18-22°C (64-72°F).

Fermentation

After fermentation, transfer the lager to a conditioning tank to mature for 2-4 weeks at lower temperatures (0-4°C or 32-39°F).

Conditioning

Once conditioning is complete, keg or bottle the beer, adding priming sugar if bottling to carbonate. Allow to carbonate for an additional 1-2 weeks before serving.
