Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Coating

In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper.

Coat the Calamari

Dredge the calamari rings in the flour mixture until well coated.

Heat the Oil

In a deep pan, heat the oil over medium-high heat until hot.

Fry the Calamari

Fry the calamari in batches for about 2-3 minutes until golden brown. Remove and drain on paper towels.

Serve

Serve hot with lemon wedges on the side.

Marinate the Chicken

In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add chicken breast, coat well, and let marinate for at least 30 minutes.

Prepare Skewers

Thread the marinated chicken onto the skewers.

Grill the Souvlaki

Preheat a grill or grill pan over medium-high heat. Cook the skewers for about 6-8 minutes, turning occasionally until cooked through.
