In a large brew kettle, heat 6 liters of water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Munich Malt. Maintain the temperature at 152°F (67°C) for 60 minutes.

Mashing

After mashing, sparge with enough water to collect 6.5 liters of wort in another kettle.

Sparging

Bring the wort to a boil. Once boiling, add Cascade Hops and Centennial Hops. Boil for 60 minutes, adding Citra Hops in the last 15 minutes.

Boiling

After boiling, cool the wort rapidly to 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale Yeast and seal the vessel. Ferment at 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, add priming sugar dissolved in a small amount of water. Bottle the beer and let it carbonate for 1-2 weeks at room temperature.
