Prepare the ingredients
Chop the yellow onion into thin slices and set aside. Mix the Dijon mustard and mayonnaise together in a small bowl to create the dijon mayo.
Form the patties
Divide the ground beef into two equal portions and gently form them into loose patties, being careful not to overwork the meat. Season both sides with salt and black pepper.
Add cheese
Immediately after flipping, place two slices of Vermont cheddar on top of the patties. Cook for an additional 2-3 minutes until the cheese is melted and the patties are cooked to your desired doneness.
Assemble the burgers
Spread the dijon mayo on the bottom half of each toasted brioche roll. Place one cheesy patty on each roll, followed by sliced onions and house pickles, then top with the other half of the bun.
Serve
Serve the double smash burgers immediately with your choice of sides.
