Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and fine salt until evenly combined and aerated.
Combine wet ingredients
In a separate bowl or large measuring cup, beat the large egg lightly. Add the milk and buttermilk, melted butter, and vanilla extract; whisk until blended.
Make the batter
Pour the wet mixture into the dry ingredients. Using a rubber spatula, gently fold until just combined — small lumps are okay. Do not overmix, which makes pancakes tough. Let the batter rest 5 minutes to hydrate the flour and allow baking powder to activate.
Adjust consistency (optional)
If the batter seems too thick for small 3–4 inch pancakes, add up to 1 tablespoon milk at a time until it drops slowly from a spoon (batter should be pourable but not watery).
Cooking and serving
Preheat griddle or skillet
Place a nonstick or cast-iron skillet over medium-low to medium heat and allow it to warm for 3–4 minutes. You want a surface temperature around 350°F (175°C) — a few drops of water should sizzle and evaporate.
Cook pancakes
For a short stack (about 3–4 small pancakes), spoon or pour 1/4 cup of batter onto the hot pan for each pancake to make 3–4 inch rounds. Cook until bubbles form on the surface and the edges look set, about 1½–2 minutes. Flip and cook the second side until golden brown, 45–75 seconds more. Repeat, wiping the pan if needed and adding a small smear of oil or butter between batches.
Keep warm
If making more than one batch, transfer cooked pancakes to a warm oven (200°F / 95°C) on a baking sheet while you finish the rest so the stack stays warm and slightly crisp at the edges.
Finish and serve
Stack 3–4 pancakes. Top with a pat of unsalted butter so it melts over the warm pancakes, add fresh berries or banana slices if desired, and drizzle with maple syrup. Serve immediately.
