Waffle Batter
Preheat
Preheat your waffle iron to medium-high heat (follow manufacturer's setting for golden waffles). Lightly brush or spray the plates with vegetable oil (about 1 tablespoon total) just before cooking the first waffle.
Dry ingredients
In a large bowl whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon salt until evenly combined and aerated.
Wet ingredients
In a separate medium bowl, beat 2 large eggs lightly. Add 1 1/2 cups whole milk, 6 tablespoons melted unsalted butter (cooled slightly so it doesn't cook the eggs), and 1 teaspoon vanilla extract. Whisk until smooth.
Combine batter
Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or whisk until just combined. Do not overmix; a few small lumps are okay. The batter should be thick but pourable. If too thick, add 1-2 tablespoons of milk.
Rest (optional)
Let the batter rest 5 minutes at room temperature to allow the baking powder to activate and the flour to hydrate — this improves texture and browning.
Cooking
When the waffle iron is hot, pour the recommended amount of batter for your waffle iron size (typically 1/2 to 3/4 cup for a standard round or 3/4 to 1 cup for Belgian) onto the center of the lower plate. Close the lid gently and cook without opening for the time recommended by your iron (usually 3 to 5 minutes) until steam slows and the waffle is golden brown.
Open the iron carefully, lift the waffle out with a nonmetal spatula or fork, and transfer to a wire rack set on a baking sheet in a warm oven (200°F / 95°C) to keep waffles crisp while you cook the remaining batter. Lightly brush or spray the iron again if needed between waffles.
Repeat with remaining batter. For extra crispness, after all waffles are cooked you can place them directly on the oven rack for 3–5 minutes to re-crisp before serving.
Optional Finish & Serving
Stack waffles on plates. Dust with 2 tablespoons powdered sugar if desired, top with fresh berries and a dollop of whipped cream, and serve with maple syrup (about 1/2 cup for family serving). Serve immediately so waffles remain golden and crisp.
