Anticucho Marinade

    Marinate the Porcelet

    In a bowl, combine minced garlic, fresh thyme, olive oil, salt, and black pepper. Rub the mixture all over the porcelet, ensuring it's well-coated. Cover and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Prepare the Grill

    Preheat your grill to medium-high heat. Once ready, remove the porcelet from the marinade and let any excess drip off.

    Grill the Porcelet

    Place the porcelet on the grill and cook for about 2-3 hours, turning occasionally, until the internal temperature reaches 145°F (63°C) and the skin is crispy.

Clam Pastel de Arroz

    Sauté the Aromatics

    In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1 minute.

    Cook the Rice

    Add the Arborio rice to the saucepan and stir for 1-2 minutes until the rice is coated with the butter. Gradually add the vegetable stock, one cup at a time, stirring constantly until the liquid is absorbed before adding more.

    Add Clams and Cheese

    Once the rice is tender and creamy, stir in the cleaned clams, grated Parmesan cheese, salt, and black pepper. Cook until the clams open and are heated through, about 5-7 minutes.

Anticucho Marinade

    Prepare the Marinade

    In a bowl, whisk together red wine vinegar, paprika, cumin, oregano, aji amarillo paste, salt, and black pepper until well combined.

    Marinate the Skewers

    Cut the porcelet into cubes and marinate them in the anticucho marinade for at least 1 hour before grilling.
