Prepare the Doughnut Batter
In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, salt, and ground nutmeg. In another bowl, whisk together the eggs, whole milk, and melted unsalted butter until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix; the batter should be slightly lumpy.

Fry the Doughnuts
In a deep pot or frying pan, heat vegetable oil to 350°F (175°C). Using a piping bag or a spoon, carefully drop spoonfuls of the batter into the hot oil. Fry the doughnuts until golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and place on paper towels to drain excess oil.

Make the Mamey Crème Fraîche
In a medium bowl, combine the mamey sapote puree, crème fraîche, fresh lime juice, honey, and salt. Whisk until smooth and well incorporated. Adjust sweetness or acidity to taste.

Assemble the Dish
On a serving plate, place a warm doughnut. Top with a generous dollop of mamey crème fraîche and finish with a spoonful of Ossetra caviar on top. Serve immediately.
