Preparation
Prepare the Mamey
Peel the mamey and remove the pit. Cut the flesh into small pieces and measure out 1 cup.
Prepare the Rhubarb
Wash the rhubarb stalks thoroughly. Chop them into small pieces until you have 1 cup.
Mixing
Combine Ingredients
In a cocktail shaker, add the mamey pieces, chopped rhubarb, lime juice, orange zest, white rum, Italian aperitif, and vanilla extract.
Shake
Fill the shaker with ice and shake vigorously for about 15 seconds to combine and chill the mixture.
Serving
Strain and Serve
Strain the mixture into a chilled cocktail glass. Optionally, garnish with a slice of lime or a twist of orange peel.
