Preparation of Ingredients

Prepare the Oysters
Carefully shuck the fresh oysters and place them on a baking sheet, keeping their juices intact.

Make Uni Butter
In a small bowl, mix together the uni, softened unsalted butter, lemon juice, and a pinch of salt until well combined.

Prepare Parmesan Lime Breadcrumbs
In a separate bowl, combine panko breadcrumbs, grated Parmesan cheese, lime zest, olive oil, salt, and pepper. Mix until all the breadcrumbs are coated.

Prepare Bone Marrow
Scoop the bone marrow into a small bowl and season with a pinch of salt.

Make Herb Oil
Blend fresh herbs and olive oil in a food processor until smooth. Season with salt to taste.
Grilling

Add Bone Marrow
Top each oyster with a small dollop of bone marrow.

Sprinkle Breadcrumbs
Generously sprinkle the Parmesan lime breadcrumbs over each oyster.

Grill Until Cooked
Close the grill lid and cook the oysters for about 5-7 minutes, or until the breadcrumbs are golden and the oysters are cooked through.
Finishing Touches

Drizzle with Herb Oil
Remove the grilled oysters from the grill and drizzle with the prepared herb oil.

Dust with Chive Powder
Sprinkle chive powder over the top of each oyster for an extra layer of flavor.
