Tea Preparation

Brew Black Tea
In a small pot, bring 1 cup of water to a boil. Add 1 tablespoon of loose black tea leaves or 1 tea bag, and steep for 5 minutes. Remove the tea leaves or bag and let it cool to room temperature.

Mix the Ingredients
In a cocktail shaker, combine the brewed black tea, gin, bergamot syrup, fresh basil leaves, fines herbes, lime juice, almond syrup, and egg white.

Dry Shake
First, dry shake (without ice) the ingredients in the shaker for about 15 seconds to emulsify the egg white.

Wet Shake
Add ice to the shaker and shake vigorously for another 15-20 seconds to chill the mixture.

Strain and Serve
Double strain the cocktail into a chilled coupe or rocks glass to remove the basil leaves and any ice shards.

Garnish
Garnish with a basil leaf or a twist of lime peel, if desired.
