Prepare the crust

In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are fully coated and the mixture resembles wet sand.

Press the crust

Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to pack it tightly. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, then remove and let it cool.

Prepare the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined.

Add sour cream and eggs

Add the sour cream, eggs (one at a time), green tea powder, vanilla extract, and all-purpose flour to the cream cheese mixture. Mix on low speed until just combined and smooth.

Pour the filling

Pour the filling over the cooled crust in the springform pan, spreading it evenly with a spatula.

Bake the cheesecake

Bake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill and serve

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. When ready to serve, carefully remove the sides of the springform pan and slice the cheesecake.
