    Halve the passion fruits and scoop the pulp (seeds + juice) into a bowl until you have approximately 1 cup of pulp. In a small saucepan combine 1 cup water and 3 tablespoons granulated sugar. Gently warm over low heat, stirring until sugar dissolves to make a light syrup (about 2–3 minutes). Remove from heat and let cool slightly.

    Place the passion fruit pulp and the cooled sugar syrup into a blender. Add 2 tablespoons fresh lime juice. Pulse briefly (3–4 quick pulses) to loosen juices from seeds. Pour the mixture through a fine mesh strainer or chinois into a pitcher, using the back of a spoon to press pulp to extract as much juice as possible. Discard solids left in the strainer.

    Taste the strained juice. If it needs more sweetness, stir in up to 1 tablespoon simple syrup (or additional sugar dissolved in a little warm water). Chill the juice in the refrigerator for 10–15 minutes if not serving immediately.
