    Assemble

    Lay the two slices of bread on a cutting board. Spread softened butter or mayonnaise evenly on one side of each slice (this will be the outside if grilling, or inside if you prefer). If using mustard, spread the mustard on the inside surface of one slice on top of the mayo/butter layer.

    Layer

    Place the cheddar or Swiss slice on one piece of bread (on the side with condiments). Arrange the three slices of deli ham on top of the cheese, slightly overlapping so the sandwich has even coverage. Add pickles or a few leaves of lettuce if using. Season briefly with a pinch of freshly ground black pepper.

    Top with the second slice of bread, condiment side down, creating the sandwich. Press gently to compact the layers slightly.

Optional: Warm or Grill

    Preheat skillet or panini press

    If you want a warm, melty sandwich: heat a nonstick skillet or griddle over medium heat. If using a panini press, preheat according to manufacturer instructions.

    Prepare exterior

    Spread about 1 teaspoon butter on the outside face of each slice of bread. Alternatively, brush a thin film of olive oil on the outside for a crisper, less buttery crust.

    Grill

    Place the sandwich in the preheated skillet. Cook for 2.5–3 minutes until the bottom is golden brown. Carefully flip with a spatula and cook another 2–3 minutes until the other side is golden and the cheese is melted. If using a panini press, cook until the bread is toasted and cheese is melted, about 3–5 minutes depending on press temperature.

    Rest and slice

    Remove the sandwich from heat and let it rest 1 minute so the cheese settles. Slice on the diagonal or down the middle and serve immediately.
