Prep

    Chill glass

    Place a coupe or Nick & Nora glass in the freezer, or fill a rocks glass with ice water to chill while you prepare the cocktail.

    If making simple syrup, combine equal parts sugar and water in a small saucepan, heat until sugar dissolves, cool and refrigerate. Ensure sparkling apple cider is well chilled.

Build & Mix

    Add 2 oz dry gin, 0.5 oz dry vermouth, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes aromatic bitters into a mixing glass.

    Fill the mixing glass with ice (enough to reach near the top) and stir gently for 20–30 seconds until the mixture is well chilled and slightly diluted (about 15% dilution).

    Discard ice/water from the chilled serving glass. Strain the stirred mixture into the chilled coupe or Nick & Nora glass.

    Top gently with 2 oz chilled sparkling apple cider. Pour slowly down the side or over the back of a spoon to preserve effervescence.

Garnish & Finish

    Lightly clap the thyme sprig between your hands to release its essential oils, then float it on the surface or rest it along the rim of the glass.

    Garnish with a thin apple slice or small fan of apple on the rim or floated. Optionally express a thin lemon peel over the cocktail for extra citrus aroma before discarding or placing as additional garnish.

    Serve immediately while sparkling cider is lively. Provide a small stirring pick if desired.
