Sauté aromatics
Heat a large skillet over medium-high heat. Add olive oil. When shimmering, add the diced onion and cook 3–4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.

Cook beef
Add the ground beef, breaking it up with a spatula. Cook 6–8 minutes until no longer pink and beginning to brown.

Stir in tomato paste, cumin, smoked paprika, salt, and pepper; cook 1 minute to toast the spices. Pour in beef broth and simmer 2–3 minutes until slightly reduced and saucy. Taste and adjust seasoning. Remove from heat and let cool slightly before using as additional filling.

Sear aromatics and chicken
Heat a large skillet over medium-high heat. Add vegetable oil. When hot, add the diced onion and cook 3–4 minutes until translucent. Add minced garlic and cook 30 seconds. Add chopped chicken thighs and spread in an even layer.

Cook and season
Cook chicken without stirring for 2–3 minutes to develop color, then stir and continue cooking 4–6 minutes until cooked through. Stir in lime juice, chili powder, ground coriander, salt and pepper; cook 1 minute to combine. Remove from heat and let cool slightly before using.

Brown pork
Heat a large skillet over medium-high heat. Add vegetable oil. When hot, add the ground pork and cook 5–7 minutes, breaking up any lumps, until browned.

Add flavorings
Add minced garlic and cook 30 seconds. Stir in soy sauce, rice vinegar, sesame oil, ground ginger, red pepper flakes (if using), and sliced green onions. Cook another 1–2 minutes until the liquid mostly evaporates and flavors concentrate. Taste and adjust seasoning. Remove from heat and cool slightly before using.

Prepare tofu and mushrooms
Press and crumble the tofu if not already crumbled. Heat a large skillet over medium-high heat and add vegetable oil. Add chopped shiitake mushrooms and cook 3–4 minutes until they release moisture and begin to brown.
