Trim and season
Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place on a cutting board and sprinkle both sides with 1 tsp kosher salt, 1 tsp black pepper, and 1 tsp paprika.

Marinate briefly
In a small bowl combine 2 tbs olive oil, 1 tbs lemon juice, and 2 tsp minced garlic. Brush or toss the chicken in the mixture until evenly coated. Let sit at room temperature for 15 minutes (or cover and refrigerate up to 2 hours).

Cook
Heat a large skillet over medium-high heat until hot (about 2 minutes). Add a thin film of oil or nonstick spray if needed. Place the chicken thighs in the skillet, skin-side (or presentation side) down if there is one, spaced so they do not touch. Cook without moving 5–7 minutes until a deep golden crust forms. Flip and cook 4–6 more minutes until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Adjust times for thickness.

Transfer the cooked chicken to a plate and let rest 5 minutes. Resting allows juices to redistribute and ensures moist meat.

While the chicken rests, sprinkle chopped parsley (2 tbs) over the pieces and add optional 1/4 tsp red pepper flakes if you want heat. Serve whole, sliced, or chopped over salads, rice, or pasta as desired.
