Trim and Pound
Trim excess fat from the chicken thighs. If pieces are uneven thickness, lightly pound to about 1/2 inch thickness so they cook evenly.
Marinate
In a bowl, whisk together buttermilk, hot sauce, 1 tsp kosher salt, 1 tsp black pepper and 1 tsp smoked paprika. Submerge the chicken in the marinade, cover, and refrigerate for at least 1 hour or up to 6 hours. The buttermilk tenderizes and the hot sauce adds heat.

Prepare Breading
In a shallow dish, combine all-purpose flour, cornstarch, garlic powder, onion powder, 1/2 tsp cayenne, 1/2 tsp black pepper and 1 tsp kosher salt. Mix well so spices are evenly distributed.
Dredge Chicken
Remove one piece of chicken from the marinade, letting excess drip off. Dredge thoroughly in the flour mixture, pressing so a thick coating adheres. For extra crispness, dip briefly back in the marinade then a second time in the flour to double-coat. Place coated pieces on a rack and let rest 10 minutes so the coating sets.
Fry Chicken
Carefully place chicken pieces in hot oil without crowding. Fry 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Adjust heat as needed to maintain 325–350°F. Transfer to a wire rack set over a baking sheet and rest 5 minutes to keep crisp.

Make Spicy Mayo
In a small bowl, whisk together mayonnaise, Sriracha and lemon juice. Taste and adjust heat (add more Sriracha) or acidity (add a few more drops of lemon) to preference.
Assemble Sandwiches
Spread a generous tablespoon of spicy mayo on the bottom bun. Place a lettuce leaf, then the fried chicken, 4 pickle slices per sandwich, and a drizzle of any pan juices if desired. Top with the other bun half. Serve immediately.
