Method
Burger Patties
Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a 3/4–1 inch thick patty about the diameter of your buns, pressing a shallow dimple in the center of each patty with your thumb. Do not overwork the meat.
Season
Season both sides of each patty evenly with kosher salt and freshly ground black pepper. Sprinkle Worcestershire sauce on one side of each patty and gently rub it in.
Cook patties
Heat a large skillet or griddle over medium-high heat and add 1 tbs vegetable oil. When the oil is shimmering and hot, add the patties (dimple-side up). Cook undisturbed for 3–4 minutes until a brown crust forms. Flip and cook another 2–3 minutes for medium; adjust time for desired doneness. In the last 1 minute of cooking, place a slice of American cheese on each patty and cover the skillet briefly to melt the cheese (about 30–60 seconds). Remove patties and rest for 2 minutes.

Thinly slice the yellow onion and separate/tear the iceberg lettuce into burger-sized pieces. Slice the tomato into 1/4-inch rounds if not already sliced. Have dill pickle slices ready. Mix the ketchup, mustard, and mayonnaise together if you prefer a combined burger sauce, or keep them separate to build to taste.
Optional caramelized onions
If you want sweeter, caramelized onions, heat 1 tsp olive oil in a small skillet over medium-low heat. Add the thinly sliced onion and cook, stirring occasionally, until softened and golden, about 12–15 minutes. Stir in 1/2 tsp brown sugar in the last 2 minutes to encourage caramelization. Remove from heat and keep warm.
Assemble burger
Spread mayonnaise (or the mixed sauce) on the bottom bun. Place shredded lettuce on top of the mayo, then add the cheeseburger patty. Top the patty with tomato slices, onion (raw or caramelized), and dill pickle slices. Spread ketchup and mustard on the top bun and place it on the assembled burger.
