Gummy Base
Bloom the gelatin
Combine the unflavored gelatin and cold water in a medium heatproof bowl. Stir briefly to combine, then let sit 5–10 minutes until the gelatin has absorbed the water and is spongy (bloomed).
Dissolve sugar
While the gelatin blooms, combine the granulated sugar and fruit juice in a small saucepan. Warm over medium heat, stirring frequently, until the sugar dissolves completely and the mixture is hot but not boiling (about 4–6 minutes).
Melt in gelatin
Remove the juice-sugar mixture from heat. Add the bloomed gelatin and the light corn syrup to the warm mixture. Stir immediately and continuously until the gelatin is fully dissolved and the liquid is smooth (about 1–2 minutes). If needed, return to very low heat for 10–20 seconds—do not boil.

Add acidity and flavoring
Stir in the fresh lemon juice and any chosen natural extract. The lemon brightens the flavor and helps set the texture.
Adjust color
If using food coloring, add 1–2 drops at a time until you reach the desired hue and stir thoroughly so the color is even.

Taste a small spoonful (careful, it will be hot). If you prefer sweeter gummies, add up to 1 tbsp more sugar and stir until dissolved. If flavor is faint, add up to 1/2 tsp more extract or a splash more fruit juice.

Prepare molds
Lightly brush silicone gummy molds or a shallow pan with the coconut oil (about 1/2 tsp total) to prevent sticking. If you plan to dust gummies, have cornstarch or sugar ready in a shallow bowl.
Cast the gummies
Pour the warm gelatin mixture into a heatproof measuring cup or squeeze bottle for control. Carefully fill the molds or pour into the prepared pan to a 1/4–1/2 inch thickness. Work quickly—the mixture begins to set as it cools.
Set
Let the filled molds sit at room temperature until they are no longer warm (about 30 minutes), then transfer to the refrigerator to fully set for 1.5–2 hours (or up to 4 hours for thicker pieces).
Unmold and finish
Pop gummies out of the molds. If sticky, gently toss them in a shallow bowl of cornstarch or granulated sugar to coat lightly and separate pieces. Shake off excess dusting.
Storage
Store gummies in an airtight container between layers of parchment at room temperature for up to 5 days or refrigerated for up to 2 weeks. If refrigerated, allow 10–15 minutes at room temperature before eating for best texture.
