If using egg white, separate one egg and measure about 0.5 oz (about half a small egg white) into your shaker. Measure 2 oz Dewar's White Label, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup. Have ice ready and a coupe or rocks glass chilled if desired.
Dry shake (if using egg white)
Add the Scotch, lemon juice, simple syrup, egg white (if using), and 2 dashes Angostura bitters to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build foam.
Wet shake
Open the shaker, add a handful of ice (about 1 cup) and re-seal. Shake hard for 10–15 seconds until the shaker is cold to the touch and the mixture is well chilled.
Strain and serve
Double-strain the cocktail into a chilled coupe or an old-fashioned glass over fresh ice, depending on your preference. Double-straining (using a fine mesh strainer) removes small ice shards and produces a silkier texture if you used egg white.
