Prepare

If using egg white, separate the egg and measure 1/2 of the egg white (about 0.5 of an egg). Chill your serving glass (old-fashioned or coupe) by filling it with ice and water while you mix the drink.

Dry shake

In a cocktail shaker, combine 2 oz bourbon, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 2 dashes Angostura bitters, and the 0.5 egg white (if using). Seal the shaker and shake vigorously without ice for 15–20 seconds. This emulsifies the egg white and creates a froth.

Wet shake

Add ice to the shaker (about a handful, roughly 4–6 large cubes or enough to fill the shaker half to three-quarters). Shake vigorously for another 12–15 seconds until the shaker is cold to the touch and well-chilled.

Strain

Discard the ice/water from the chilled serving glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine-mesh strainer (this removes small ice chips and any egg white solids) for a silky texture.

Garnish & Finish

Express an orange peel or place a candied orange slice on the rim or floating on top of the cocktail. Optionally, grate a little nutmeg over the foam or add 1 small additional dash of Angostura bitters on the foam and use a toothpick to create a simple design.
