Cocktail
Method
Cocktail
Dry Shake (if using egg white)
In a cocktail shaker, combine the gin, creme de violette, maraschino liqueur, fresh lemon juice, simple syrup, and the egg white. Seal the shaker and shake vigorously without ice for 15–20 seconds. This 'dry shake' builds a rich, frothy texture.
Wet Shake
Add the ice to the shaker (about 1 cup) and shake again vigorously for 10–15 seconds until well chilled and the outside of the shaker becomes frosty. If you did not use egg white, combine all liquid ingredients with ice and shake for 12–15 seconds.
Strain and Serve
Discard the ice from the chilled glass if used. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any egg white solids. The resulting drink should be pale, slightly lavender to blue, with a foamy head if egg white was used.
Garnish
Express a lemon twist over the surface to release oils, then rim and drop it into the drink, or garnish with a maraschino cherry on a pick. Serve immediately.
