Combine liquids

In a large heavy-bottomed saucepan combine the fresh apple cider and water. Place over medium heat and warm until steaming but not boiling (about 5 minutes).

Dissolve sugars

Add the granulated sugar and light brown sugar to the warmed cider, stirring constantly until fully dissolved (about 3–4 minutes). Keep heat at a gentle simmer — do not boil vigorously.

Add jams

Whisk in the strawberry, apricot, and blackberry jams until they dissolve into the cider mixture and the liquid is smooth and homogenous (2–3 minutes). Use a small whisk or immersion blender for a perfectly smooth texture.

Simmer to marry flavors

Reduce heat to low and simmer gently for 8–10 minutes, stirring occasionally, until the mixture thickens slightly and the jam flavors are integrated into the cider.

Spices & Brighteners

Add spices

Add the cinnamon sticks, whole cloves, and sliced fresh ginger to the pot. Continue to simmer on low for an additional 8 minutes to infuse the spices.

Finish with acid and vanilla

Remove the pot from heat. Stir in the fresh lemon juice and vanilla extract. Taste and adjust: add up to 1 tablespoon more lemon juice if you prefer brighter acidity, or a pinch more sugar if you want it sweeter.

Strain (optional)

If you prefer a clear, smooth cider, strain the mixture through a fine-mesh sieve or cheesecloth into a clean pitcher, pressing on solids to extract flavor. Discard solids. For a thicker, fruitier texture, skip straining.

Optional Finishes

Add spirit (optional)

If using, stir in the bourbon or dark rum while the cider is warm (but not boiling). This builds complexity and warms the drink.

Serve

Ladle Blake's Triple Jam into heatproof mugs or glasses. Garnish each serving with a fresh mint sprig. Serve warm (best) or chill and serve over ice for a cold version.
