Method
Chips & Cheese
Preheat oven
Preheat the oven to 375°F (190°C). Prepare a rimmed baking sheet lined with parchment or foil.
Spread 6 cups of house-made tortilla chips in an even layer on the prepared baking sheet, leaving small gaps so cheese can melt into nooks.
Evenly sprinkle 2 cups shredded cheddar-Monterey Jack blend over the chips.
Warm 1 cup white queso until smooth and pour or drizzle over the chips and shredded cheese, focusing on the center and a few edges so every chip gets some sauce. If queso is cold, heat gently in a small saucepan over low heat, stirring, or microwave in 20-second bursts until pourable.
If adding an optional protein (beef, chicken, chili, or steak), distribute 1 cup of the chosen warmed protein evenly over the chips and cheese now.
Bake in the preheated oven 7–10 minutes, or until the shredded cheese is melted and queso is bubbling slightly. Watch closely to avoid burning the chips.
Fresh Toppings
While the chips bake, prepare the fresh toppings: shred 2 cups lettuce, dice 1 cup tomatoes, finely dice 1/2 cup red onion, slice 1/2 cup black olives, and measure 1/4 cup pickled jalapeños.
Place prepared toppings in small bowls for quick assembly.
Assembly & Finish
Remove the baked chips and cheese from the oven and let rest 1–2 minutes so queso sets slightly and the chips crisp back up a bit.
Evenly distribute the shredded lettuce over the melted-cheese chips.
Scatter the diced tomatoes and red onion over the lettuce, followed by the sliced black olives and pickled jalapeños.
Dollop 1/2 cup sour cream in 3–4 places over the nachos, then place 3–4 spoonfuls (about 3/4 cup total) of guacamole around the platter so guests can take both with chips.
Season lightly with 1/4 tsp kosher salt and 1/8 tsp freshly ground black pepper. Sprinkle 2 tbs chopped cilantro if using and serve with lime wedges on the side.
Serve immediately while chips are still warm. If serving family-style, provide plates and napkins — the nachos are best eaten within 10–15 minutes to avoid sogginess.
