Berry Syrup

Cook berries

In a small saucepan combine 1 cup frozen mixed berries, 1 tablespoon granulated sugar, and 2 tablespoons water. Cook over medium heat, stirring occasionally, until berries break down and mixture simmers (about 5–7 minutes).

Mash and strain

Use the back of a spoon or a small potato masher to press the berries against the pan to release juices and break up pieces. Remove from heat and stir in 1 tablespoon fresh lemon juice. Optionally strain the mixture through a fine-mesh sieve into a bowl to remove seeds and pulp for a clear syrup, pressing solids gently to extract as much juice as possible. Yield: about 3–4 tablespoons syrup.

Cool

Allow the syrup to cool to room temperature (10–15 minutes) or place in refrigerator for 5–10 minutes to speed cooling. If you prefer a chunkier, more textured base, skip straining and cool the whole mixture.

Citrus Brightener

In a small bowl combine 1 tablespoon lime juice and 1 teaspoon finely grated lemon zest. Stir briefly. This brightens the syrup and will be added to the drink to balance sweetness.

Prepare glasses

Fill two tall glasses evenly with ice (about 1/2 cup ice per glass). If using frozen berries as garnish, add 3–4 berries to each glass.

Combine syrup and citrus

Divide the cooled berry syrup between the two glasses (about 1.5–2 tablespoons per glass). Add half of the lime-lemon mixture to each glass (about 1/2 tablespoon lime juice and 1/2 teaspoon lemon zest per glass). If you prefer sweeter, add up to 1 teaspoon simple syrup or honey divided between the glasses.

Top with sparkle

Slowly pour 1 cup (240 ml) cold sparkling water or club soda into each glass (pour over the back of a spoon if you want to preserve more carbonation). Stir gently once to combine the syrup and sparkling water—avoid vigorous stirring to keep fizz.

Optional alcohol

For an adult version, add 30 ml (1 ounce) vodka or gin to each glass before topping with sparkling water, then gently stir to combine.

Garnish

Garnish each glass with 2 mint sprigs and 4 berries. If you strained the syrup and want a decorative icy rim, rub a lemon wedge around the glass rim and dip in superfine sugar before assembling.

Serve

Serve immediately while cold and fizzy. Stir gently once more at the table if needed to re-distribute syrup settled at the bottom. Leftover syrup can be refrigerated in a sealed container for up to 5 days and used to make more drinks or as a topping for yogurt or pancakes.
