In a large pot, heat 19 liters of water to 67°C (153°F). Add the pale malt and caramel malt, stirring to combine. Maintain the temperature for 60 minutes.

Mashing

After mashing, rinse the grains with hot water to collect the wort. Bring the collected wort to a boil.

Sparging

Once boiling, add the Citra hops and boil for 60 minutes. Add the Simcoe hops during the last 15 minutes of the boil.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches 18-20°C (64-68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel, pitch the yeast, and seal with an airlock. Ferment for 1-2 weeks at room temperature.

Fermentation

Once fermentation is complete, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap securely.

Bottling

Allow the bottled beer to condition for at least 2 weeks at room temperature before chilling and enjoying.
