In a large brew kettle, heat 5 gallons of water to around 160°F (70°C). Add the pale malt and caramel malt, stirring gently. Maintain the temperature around 150°F (65°C) for 60 minutes.

Mashing

After mashing, drain the liquid (wort) into another kettle, rinsing the grains with hot water to extract as much sugar as possible.

Lautering

Bring the wort to a boil and add Cascade hops. Boil for 60 minutes, adding Centennial hops with 15 minutes left and Amarillo hops with 5 minutes left.

Boiling

Cool the wort quickly to about 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a fermentation vessel. Add the American Ale yeast and seal with an airlock. Ferment at around 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap securely.

Bottling

Allow the bottles to carbonate at room temperature for 1-2 weeks.

Carbonation

Chill the bottles and serve your King Pin Pale Ale. Enjoy responsibly!
