Prepare the Marinade

In a bowl, mix the achiote paste, minced garlic, ground cumin, orange juice, lime juice, salt, and black pepper to create a marinade.

Marinate the Pork

Place the pork shoulder in a large dish and pour the marinade over it, ensuring the pork is well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Slow Roast the Pork

Preheat the oven to 300°F (150°C). Transfer the marinated pork to a roasting pan. Cover with foil and roast for 4-5 hours, or until the pork is tender and easily shreds with a fork.

Prepare the Side Dishes

While the pork is roasting, prepare the fried chayote, black beans, organic kale, chipotle corn salsa, apple pico de gallo, avocado, and cotija cheese as accompaniments.

Serve

Once the pork is done, shred it and serve with the prepared sides, garnished with cotija cheese.
