Prepare the Halibut

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and chopped red bell pepper, and cook for an additional 3-4 minutes.

Cook the Fish

Add the Wild Pacific Halibut fillets to the skillet. Season with salt and black pepper. Cook for about 8-10 minutes, turning occasionally, until the fish is cooked through and flakes easily with a fork.

Combine Ingredients

Remove the skillet from heat. Flake the halibut into bite-sized pieces and mix in chopped cilantro and lime juice. Adjust seasoning if necessary.

Assemble the Enchiladas

Preheat your oven to 375°F (190°C). Take a corn tortilla, place a portion of the halibut mixture in the center, roll it up, and place it seam-side down in a baking dish. Repeat with remaining tortillas.

Bake

Cover the enchiladas with your choice of enchilada sauce and sprinkle cheese if desired. Bake in the preheated oven for 20-25 minutes or until heated through and slightly golden on top.

Serve

Remove from the oven and let cool for a few minutes. Serve warm with additional cilantro and lime wedges on the side.
