Marinate the Chicken
In a large bowl, combine jerk seasoning, lime juice, minced garlic, grated ginger, chopped scotch bonnet pepper, olive oil, salt, and black pepper. Mix well to form a marinade. Add chicken thighs and coat them thoroughly with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
Rest and Serve
Once cooked, remove chicken from the grill and let it rest for 5 minutes. Serve hot with your choice of sides.
