Prepare the Chicken

Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

Dredge the Chicken

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with cornmeal. Dredge each chicken breast in flour, dip in the egg, and then coat with cornmeal.

Cook the Chicken

In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and place on a baking sheet.

Add Toppings

Spread salsa over each chicken breast and then sprinkle with Mexican cheese blend evenly on top.

Bake

Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Prepare Garnish

While the chicken is baking, chop fresh cilantro and slice the avocado and lime.

Serve

Once baked, remove the chicken from the oven, garnish with fresh cilantro, sliced avocado, and a squeeze of lime. Serve hot.
