Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.
Dredge the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with cornmeal. Dredge each chicken breast in flour, dip in the egg, and then coat with cornmeal.
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and place on a baking sheet.
Add Toppings
Spread salsa over each chicken breast and then sprinkle with Mexican cheese blend evenly on top.
Bake
Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
