Prepare the Salmon

In a skillet, heat olive oil over medium heat. Add diced red onion and sauté until translucent, about 5 minutes. Add minced garlic, cumin, and chili powder; cook for another minute until fragrant.

Add the salmon fillets to the skillet, season with salt and pepper, and cook for about 3-4 minutes per side until cooked through. Remove salmon from skillet and flake with a fork.

In a bowl, combine the flaked salmon, chopped cilantro, and lime juice. Mix well.

Assemble the Enchiladas

Preheat the oven to 375°F (190°C). Fill corn tortillas with the salmon mixture, rolling them tightly and placing seam-side down in a baking dish.

Once all the tortillas are filled and placed in the dish, pour your favorite enchilada sauce over the top, ensuring all tortillas are covered.

Sprinkle cheese on top if desired, and bake in the preheated oven for 20-25 minutes until heated through and bubbly.

Serve

Remove from the oven, let cool slightly, and serve with extra cilantro and lime wedges.
