Prep
Rim the glass
Run the lime wedge around the rim of a chilled coupe or rocks glass. Dip the rim lightly into coarse salt or Tajín so it adheres evenly. Set the glass aside.
If you don't have habanero-infused tequila, make a quick infusion: add one thin slice of habanero (seeds removed for milder heat) to 8 oz blanco tequila and let sit 30–60 minutes, tasting every 10 minutes until desired heat is reached. Strain out pepper. (Do not leave too long — heat can become overpowering.)
Mixing
Add the habanero-infused blanco tequila, Cointreau, fresh lime juice, passion fruit puree, and simple syrup into a cocktail shaker.
If you want extra controlled heat, add 1–2 drops of habanero tincture or 1/8 tsp habanero-infused simple syrup. Do not overdo — a little goes a long way.
Fill the shaker with ice (about 1 cup) and secure the lid.
Shake vigorously for 12–15 seconds, until the shaker is cold and well-chilled. This both chills and dilutes to balance the cocktail.
Finish & Serve
Double-strain the cocktail into the prepared chilled coupe or rocks glass to remove ice shards and any passion fruit solids. Use a fine mesh strainer over the shaker's strainer for a cleaner finish.
Garnish with half a passion fruit or a thin wheel on the rim and, if desired, a thin slice of habanero floated on top for aroma and visual heat. Serve immediately.
Taste and adjust: if the drink is too tart, add 1/4 oz simple syrup and stir gently; if too sweet, add 1/4 oz lime juice.
