Orange Soda

Make Orange Syrup

Combine 1 cup water, granulated sugar, and orange zest in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and stir in fresh orange juice. Let cool to warm (not hot). Stir in citric acid until dissolved.

Degas and carbonate: If using baking soda method to lightly fizz the syrup, dissolve sodium bicarbonate into the warm orange syrup quickly and gently; it will foam — do this over a sink and stir to stop foaming. (This step is optional; primary carbonation comes from cold carbonated water.)

Assemble the soda: In a clean bottle or pitcher, combine 1 part orange syrup with 3 parts cold carbonated water (example: 1 cup syrup + 3 cups soda water). Taste and adjust: add more syrup for sweetness or a pinch more citric acid for brightness. Chill thoroughly and serve over ice.

Bottling: To bottle for single-serve glass bottles, measure syrup to water ratio so each bottle gets the same dilution. Sanitize bottles and fill with soda mixture leaving 1–1.5 inch headspace; cap immediately and refrigerate. This recipe is intended for immediate refrigeration — not for natural bottle-conditioning.

Root Beer

Make Root Beer Concentrate

In a small saucepan, combine 4 cups water, brown sugar and granulated sugar. Bring to a gentle boil and simmer 3 minutes to dissolve and slightly reduce. Remove from heat and cool slightly. Stir in root beer extract, vanilla extract and wintergreen extract (if using) until fully incorporated. Add citric acid and stir to dissolve.

Taste and adjust: If the flavor is too mild, add an additional 0.5–1 tsp root beer extract. If too sweet, add a small pinch more citric acid.

Assemble: Mix 1 part root beer concentrate with 3 parts cold carbonated water (example: 1 cup concentrate + 3 cups soda water). Stir gently to preserve carbonation. Serve chilled.

Bottling: Sanitize bottles. Combine measured concentrate and chilled carbonated water in each bottle leaving 1–1.5 inch headspace, cap and refrigerate immediately. Do not attempt secondary fermentation in capped glass bottles.

Birch Beer

Make Birch Syrup

In a saucepan, bring 3 cups water and granulated sugar to a simmer until sugar dissolves. Remove from heat and stir in birch bark or birch extract, molasses and vanilla. Let steep 10 minutes for the birch flavor to infuse. Strain if using bark pieces. Stir in citric acid to balance sweetness.

Assemble: Combine 1 part birch syrup with 3 parts cold carbonated water. Stir gently to combine and preserve carbonation. Taste and adjust: add a touch more molasses for depth or more citric acid for brightness.

Bottling: Pour measured mixture into sanitized bottles leaving headspace, cap, and refrigerate immediately.

Cream Soda

Make Vanilla Cream Base

In a small saucepan, combine 1 cup water and granulated sugar. Split and scrape vanilla bean into the pan (or add vanilla extract). Bring to a simmer and stir until sugar dissolves. Remove from heat and let the vanilla steep for 10 minutes. Stir in cream (or half-and-half) and citric acid until combined. Chill the mixture completely.

Assemble: Mix 1 part chilled vanilla cream base with 3 parts cold carbonated water. Stir gently to combine. Taste: add a little more cream for silkiness or more vanilla for stronger flavor.

Bottling: Sanitize bottles. Combine measured cream soda and chilled carbonated water in bottles leaving headspace, cap and refrigerate immediately. Serve cold.

Bottling & Serving

Sanitize all bottles, caps and any filling equipment by boiling or using a food-safe sanitizer. Rinse thoroughly if required by sanitizer instructions.

Work cold: Keep carbonated water and syrups chilled to preserve carbonation when mixing and filling bottles.

Filling: For consistent flavor, pre-measure syrup and soda water for each bottle (use the 1:3 syrup:carbonated water ratio). Fill bottles leaving about 1–1.5 inches (25–40 mm) headspace. Cap immediately and refrigerate upright.

Storage & Shelf life: Store refrigerated and consume within 7–10 days for best flavor. These recipes are ready-to-drink sodas (force-carbonated with chilled soda water) not naturally conditioned; do not leave at room temperature for extended periods.

Serving suggestion: Pour over ice, garnish orange slices with orange soda, or a scoop of ice cream for a float with cream soda. Enjoy chilled.
