Prepare the Chicken

Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.

Sear the Chicken

In a large oven-safe skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown. Flip the chicken and cook for an additional 3-4 minutes.

Add Aromatics

Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and chopped shallots. Sauté for about 2 minutes until fragrant and translucent.

Deglaze the Pan

Pour in the white wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and let it cook for 2-3 minutes.

Combine Ingredients

Add the grape tomatoes and tarragon to the skillet, stirring to combine. Return the chicken thighs to the skillet, skin-side up.

Bake the Chicken

Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Finish and Serve

Remove the skillet from the oven and add the remaining 2 tablespoons of butter to the sauce, stirring until melted. Serve the chicken thighs with the sauce spooned over them.
