Method
Prepare Glass
Rim the glass
Choose a rocks or coupe glass. Moisten the rim lightly with a lime wedge. Dip the rim into coarse salt or cinnamon-sugar evenly to coat. Set the glass aside to dry while you mix the cocktail.
Mix Cocktail
Combine ingredients
In a cocktail shaker, add 1.5 oz Jose Cuervo Tradicional Plata, 0.75 oz 400 Conejos mezcal, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, and 0.5 oz maple-agave syrup.
Add spice
Add 1/8 teaspoon (0.125 tsp) ground cinnamon directly into the shaker so it blends into the cocktail.
Add ice and shake
Fill the shaker with large ice (about 1 cup). Secure the lid and shake vigorously for 12–18 seconds, until the shaker is very cold to the touch and the exterior shows frost.
Serve
Optional: If you want a stronger cinnamon aroma, sprinkle a very light pinch of ground cinnamon on top of the finished drink or express a lime peel over the surface before garnishing.
