Method

Prepare the Dough

1

Mix the Ingredients

In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Gradually add the water while mixing until a dough forms.

2

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

3

Combine Filling Ingredients

In a bowl, mix together the grated Pecorino cheese, sugar, and lemon zest until well combined.

Assemble and Cook

4

Roll Out Dough

Divide the dough into small pieces and roll each piece into thin rounds.

5

Fill the Seadas

Place a small spoonful of the cheese filling in the center of each dough round. Fold the dough over to create a half-moon shape and seal the edges tightly.

6

Fry the Seadas

In a large skillet, heat oil over medium heat. Fry the sealed seadas until golden brown on both sides, about 3-4 minutes per side.

Serve

7

Drizzle and Dust

Remove the seadas from the skillet and drain on paper towels. Serve warm, drizzled with honey and dusted with powdered sugar.
