Fried Tiger Shrimp Rolls
Method
Preparation
Soak Rice Paper Wrappers
Fill a large shallow dish with warm water. Dip each rice paper wrapper into the water for about 10 seconds until pliable, then lay it flat on a clean surface.
Assemble the Rolls
Place a spoonful of the shrimp mixture near the bottom of the rice paper wrapper. Fold the sides in and roll it up tightly from the bottom to the top. Repeat until all filling is used.
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).
Fry the Rolls
Carefully add the rolls to the hot oil in batches, frying for 3-4 minutes or until golden brown and crispy. Remove and drain on a paper towel.
Serve
Serve the fried tiger shrimp rolls hot with plum sauce for dipping.
