Method

Prep patties
Remove Impossible patties from packaging and let them sit at room temperature for 10 minutes while you prep other ingredients. Pat each patty dry with a paper towel to remove excess moisture.
Season
Lightly brush both sides of each patty with 1 tablespoon neutral oil total (reserve remaining oil for the grill/skillet) then season both sides with salt (about 1/2 tsp per patty divided) and freshly ground black pepper.
Preheat grill or skillet
Preheat a grill or heavy skillet (cast-iron preferred) to medium-high heat (about 375–425°F / 190–220°C). If using a skillet, add the remaining 1 tablespoon neutral oil to the pan and allow it to shimmer but not smoke.
Rest patties
Once cooked to your liking, remove patties from heat and let rest for 2 minutes while you toast the buns and finish toppings.
Salad & Toppings
Wash and dry lettuce leaves. Core and slice the tomato into 1/4-inch (6 mm) thick slices. Peel and thinly slice half a red onion into rings. If using pickles, have slices ready. Arrange lettuce, tomato slices, onion rings, and pickles on a plate for assembly.

In a small bowl combine 1/2 cup mayonnaise, 2 tablespoons finely minced red onion, 1 teaspoon lemon juice, 1/2 teaspoon Dijon mustard, 1/2 teaspoon grated garlic, 1/4 teaspoon smoked paprika (if using), 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir until smooth and taste; adjust seasoning or lemon to preference. Chill for at least 5 minutes to let flavors meld.
Assembly
Spread about 1–2 tablespoons of the onion mayo evenly on the bottom bun. Place 1–2 lettuce leaves on the mayo, add a tomato slice, then place the cooked Impossible patty on top. Add a few onion rings and pickles (if using). Spread a little more onion mayo on the top bun and place it on the burger. Serve immediately.
Repeat for the second burger. Serve with your choice of sides (fries, salad, or chips).
