Crispy Calamari
Prepare calamari
Pat the cleaned calamari rings very dry with paper towels. Removing as much surface moisture as possible ensures a crisp coating.
Set up dredging stations
In a shallow bowl or plate, whisk together flour, cornstarch, breadcrumbs (if using), kosher salt, black pepper, paprika and garlic powder until evenly combined. In a second bowl, whisk the eggs with the milk until smooth.
Dredge calamari
Working in batches of about 6–8 rings to avoid overcrowding, first toss the calamari lightly in the flour mixture to coat, then dip into the egg mixture, letting excess drip off, and finally return to the flour mixture for a final coating. Press gently so the coating adheres; shake off any large clumps.
Heat oil
Pour oil into a heavy-bottomed pot or deep skillet to a depth of about 1½–2 inches (approximately 3–4 cups). Heat over medium-high until the oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of the coating into the oil — it should sizzle and rise steadily without browning instantly.
Fry calamari
Fry the coated calamari in batches so the oil temperature stays near 350°F. Cook for 1½–2 minutes per batch, stirring gently with a slotted spoon or spider so pieces don’t stick, until golden and crisp. Avoid overcooking — calamari becomes tough if cooked too long.
Drain and finish
Use a slotted spoon to transfer fried calamari to a paper towel–lined baking sheet or plate to drain. Immediately season with a light sprinkle of salt. Keep warm in a 200°F (95°C) oven on a wire rack while you finish remaining batches. Sprinkle with chopped parsley and serve with lemon wedges.
Lemon Garlic Aioli
Make the aioli
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, lemon zest, Dijon mustard, olive oil, salt, black pepper and hot sauce (if using). Whisk vigorously until smooth and slightly glossy. Taste and adjust seasoning — add more lemon juice for tang, salt for seasoning, or hot sauce for heat.
Chill and serve
Cover and refrigerate the aioli for at least 15 minutes to let the flavors meld. Serve chilled or at cool room temperature alongside the hot calamari for dipping.
